Tonight’s dinner was brought to you by a craving for something savory, spicy, and easy to make… and by an AI-generated suggestion that had me intrigued: Buffalo Chicken Croissants.

Think spicy shredded chicken wrapped in buttery, flaky pastry. I mean- how could that possibly go wrong?

  • 1 cup shredded chicken ( I used Rotisserie Chicken)
  • 2-3 tbsp buffalo sauce

This one was as easy as promised! The AI didn’t over-estimate my time management skills this time- it really was a 15-minute prep job. The filling came together in minutes, and assembling the croissants was kind of fun. (A little messy, but fun.)

Baking:

They baked up beautifully! Flaky on the outside, gooey and spicy on the inside. The smell alone was enough to summon my fiancée to the kitchen with “What is THAT and can I eat all of them?” vibes.

Meal-Worthiness: Here’s the catch: As a main dinner, it left us… grazing for snacks afterward. It’s more of a party food or a crowd-pleasing game-day snack than a dinner-for-two situation. Unless you eat, like, eight. (Which we may or may not have.)

Next time, I’d pair them with another side or some roasted veggies to make them dinner worthy. But flavor-wise? Total win.
